Paleo Homemade fondant!! š½

Littlest H will be enjoying her second birthday tommorow! Oh the time, breeze on the wind. I'll keep myself from projecting sad mother on her special day ( maybe, hopefully ;)
Her favorites right now are Gerald and Piggie books, so we are working on some cute decor to go with that love. I have found fondant the easiest way to make a theme come to life. We eat paleo, so these little fondant piggies are made of maple syrup and honey marshmallows mixed with cane sugar arrowroot icing sugar!!
Tastes amazing, sweet but not overwhelming.

It's a sugar dust mess , but cleans up quick with a wet cloth!
I use the vitamix on 7 to make the icing sugar powder.
1 cup cane sugar
1-2 tbsps arrowroot flour

Mix 2 cups of the powder sugar with half the paleo marshmallows ( recipe found in My Paleo Patisserie by Jenni Hulet ) and mix mix mix. Use a big bowl first then transfer to an arrowroot dusted silicone mat.
You'll end up kneading it like a bread!

This natural food coloring saves me so much time making from scratch colors. I'm a huge fan ā¤ Order on Amazon..

For the finished product use lots of coconut oil on your hands. It smooths and keeps the fondant from drying out.
